I’m a snacker. I eat all day, every day. Thankfully I just peck at stuff instead of consuming large quantities all day, but none the less–eating is eating. I’m always hungry. In an effort to fill myself without gaining a million pounds, I went to my best friend Pinterest for some help. I found several recipes for “no-bake energy bites” and things of the sort. None of them were exactly my taste, so I combined bits of all the recipes into one masterpiece. My friends and family come in and go to the fridge to get some whenever they come over. This little treat is EASY to make and can be adjusted to satisfy your tastes.
My BASIC version is simple. All you need is:
-3/4 cup of Creamy Peanut butter (I like reduced fat…other creamy nut butters are okay as well)
-1 cup of rolled oats
-1 cup of shaved coconut (sweetened or unsweetened is your choice)
-1/2 cup semi-sweet chocolate chips (more or less to taste) **Substitutions possible
-1/2 of honey
-4 tbs of flax seed
– ½ tbs Vanilla extract
-1/2 tsp of cinnamon (more or less to taste)
** dark chocolate chips, raisins, dried cranberries, chopped nuts, etc.
Step 1: Combine the oats, coconut, chocolate chips, cinnamon, and flax in a large bowl and mix thoroughly.
Step 2: Stir in peanut butter, honey, and vanilla to your dry mixture.
Step 3: Hand stir together all of the ingredients together VERY WELL (getting a giant bite of vanilla is TERRIBLE), then cover, and refrigerate for at least 30 minutes.
Step 4: Roll spoonfuls of the mixture into 1 inch balls and place on a plate or cookie sheet until all of the mixture is used.
Step 5: Refrigerate the balls for at least 30 minutes until transferring them to another container.
Step 6: Enjoy!
These treats are great at room temperature, refrigerated, or even frozen! I prefer refrigerated, but they are good in any form. They’ll last about 2 weeks in the refrigerator (if they aren’t all eaten first). TRUE STORY: I didn’t get to take a display picture because my family and friends seriously ate them all before I could get a nice, posed picture of them. Serves me right I suppose for waiting to make them when I knew people would be here soon!
I like to jazz them up from time to time by changing out the chocolate chips for different items. If you plan on serving ALL of them right away, you can even do things like diced apples instead of the chocolate chips. The possibilities go on and on.
Seriously, I eat 1 or 2 and am satisfied for hours. I really should’ve invested in stock in these ingredients before I started making them about 6 months ago because my family, friends, and I make them all the time!
